Is there a way to hide part of the Document Definitions so they are not available for matching by a verification operator during the verification?

Answer

It is not currently possible to prevent a specific verification operator from accessing a specific Document Definition. However, it is possible to restrict the usage of particular Document Definitions on a custom batch type level (Batch Type properties > Recognition tab > Document Definitions):
