What is the difference between "Plain text" and "Preserve original formatting" recognition modes in FineReader PDF for iOS? 

Answer

To extract information from the scan instantly and privately, select the Plain Text mode to recognize text on-device without connecting to the Internet. Offline recognition converts text to TXT format and supports 63 languages.
In this mode, up to three recognition languages can be selected for a single document. 

To keep the formatting of the captured text (footnotes, tables, etc.), use the Preserve text formatting mode. The recognition is being proceeded on the server (online) and supports 183 languages and 4 formats (Word, PDF, Excel, etc.) for the resulting file.

In this mode, up to two recognition languages can be selected for a single document. 

Note: The English language in the Preserve text formatting recognition mode is selected by default and can not be deselected.
