Answer

It is impossible to rename fields in FlexiCapture 12 dynamically in course of document processing.

Field structure in FlexiCapture is rather rigid and cannot be changed on the go unless variability is predefined such as with table rows number. The field structure is strictly defined in Document Definition, and the field Name is a cornerstone of the field identity.
