To recognize documents with Fraktur fonts you would need a separate license which supports this feature if you obtained the license before the R2 update. Starting from R2 update Gothic fonts are available for recognition as a separate add-on.

In the workflow properties you would need to choose Gothic text type and language (Old English, Old German, etc.). Choose Normal text type and regular language option (English, German, etc.) as well if your document also contains regular text.
