we have bank statements from different banks. Is it possible to extract this data into XML documents with common tag names?

Are you planning to multiple DocDef (1 DocDef for each bank) or are you creating 1 DecDef for all banking type? In either case, you should have common tag name as long as you name the field the same. I suggest looking at one of the sample project that comes with FlexiCapture. You can see that even though their are different "invoice" they capture the same information and keep the same field name. In that case, during export, the export field name should be the same even though the invoice are different.
