It would seem that any PDF that we try and OCR through our Recognition server v4 that is larger than 30MB, we get this error: An error occurred while exporting the result: Not enough memory! export profile #1. Any ideas on what's going on and how to fix it?

It really depends on the PDF file so you might want to send this to your local ABBYY support. In general, I get this issue on either very large files or not clean images. i.e. lots of noise. With those type of images, it creates a bunch of OCR area which unfortunately, exceeds the memory limit (application is still 32bit). What you can do is apply some clean up option, use a large area template or if you are on the latest version of Recognition Server 4.0, there is a new feature to "split" files for processing to reduce the memory limitation.
You are right, recognition quality depends much on the inital image parameters (resolution, brightness, contrast, noise), you can see some scanning tips in RS Help, section Introduction->Document Workflow->Scanning Import.
Unfortunately it is hard to point out the reason of the issue without seeing the images that you process. As a variant you could try playing with processing settings (e.g. select appropriate print type or clear background noise on the Advanced processing settings tab), but this may not provide any effect if image resolution and actual text size are not enough for good recognition.
