Is there a way in FC 11 to change field name at the export?
I want value to be exported as field name.
i.e, In exported XML, tag of field value should be created as a field name.

This would be a custom script export. Basically for all the export, we usually have the field name and value. If you just want the value, then you would have to create a custom export script.
Sample scripts describing export (abbyy.com) Should give you an idea on export script look.

No I dont want just the field value..I need to append fieldName with field value.
Ex :
FieldName = F1;
Value = "Append";
Final XML tag for field should get created as "F1_Append";

So what you want isn't an out of the box setting. You would have to create your own custom export script to get the export in the format you want. Look at the sample export script link above for some idea on how to format the export file.
