I have set of documents and the columns in each document are not fixed, can we detect a table and extract all table data along with its header without predefining the columns.

No, FlexiCapture 12 doesn't have such functionality. It is designed to extract field values, and fields (in this case, table columns) must be predefined for FlexiCapture 12 to know what to extract and how to extract it. If you want to extract unstructured tables you may be interested in FineReader Server 14, in which you can set up conversion of tables from the imported files to Excel file formats.
