We referred to following link for supported countries and languages:
1. Are invoices from any other countries supported apart from what are mentioned in above link ?
2. Are invoices originating from Latvia pre-configured/supported ?
3. If invoices originating from Latvia are not pre-configured/supported, can we create and train a document definition in Latvian language in FlexiCapture for Invoices ?

No

Yes, It is possible for you to add the new language support by adding the keywords in the document definition for the required lanuage.
