I believe "analyze" simply compares your document definition to the document in question (after pre-recognition) and returns for you the match quality etc.; basically it's an earlier stage of the larger recognition process. I don't even think it populates any fields. Apparently sometimes these stages might need to be ran individually although I've never found a reason to do that as yet.

The “analyze” is matching you document definition to your image. All your fields after that will be on their places, but they will be empty. The “recognition” is matching you document definition and filling the fields with values.
