I want to use Abby to convert screenshots from youtube videos into text. but the text i want is php code and that language is not an option with Abby or any other OCR. so which language does abby have that is the closest I could use to programing languages?

Do I understand correctly that you want to convert code in PHP to text, i.e. to recognize a screenshot containing the programming code? If so, try to use a simple English language for recognition. Also it is recommended to use the processImage method with the textExtraction profile, in order to extract maximum of text from the screenshots.
